Not sure if this will work but have you tried right clicking the title bar of “Remote Desktop Connection” The blue part at the top of your screen that shows the connection name and try using “Smart Sizing” if it is already on try turning it off, this may give you scroll bars though.
Note: Right clicking the title bar does not work when it is in full screen so first make sure you are in windows mode. It definitely sounds like a resolution issue, I think maybe smart sizing in combination with changing screen resolution may help you find a workable solution to this issue.
